300g elbow macaroni

200ml Guinness (non-alcoholic stout can be used as a substitute)

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

250g sharp Irish cheddar cheese, grated

100g mozzarella cheese, grated

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

50g breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Pasta Preparation: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes, stirring continuously, until the mixture is golden and bubbly.

      Add Liquid: Gradually pour in the whole milk while whisking to prevent lumps. Slowly add the Guinness, continuing to whisk until the sauce is smooth and begins to thicken, about 4-5 minutes.

        Cheesiness: Reduce heat to low, and stir in the grated Irish cheddar and mozzarella cheeses until fully melted and creamy. Add Dijon mustard, garlic powder, onion powder, salt, and pepper to taste. Mix well.

          Combine: Add the cooked macaroni to the cheese sauce and stir until the pasta is fully coated.

            Prepare for Baking: Preheat the oven to 190°C (375°F). Pour the mac and cheese mixture into a greased baking dish.

              Topping: In a small bowl, mix the breadcrumbs with a bit of melted butter (optional) and sprinkle evenly over the mac and cheese for a crunchy topping.

                Bake: Place the dish in the preheated oven and bake for 20-25 minutes, until the top is golden brown and bubbly.

                  Garnish and Serve: Once baked, remove from the oven and let it cool slightly. Garnish with freshly chopped parsley before serving.
