2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spice level)

Salt and pepper to taste

1/2 cup chipotle ranch dressing

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn (canned or frozen)

1 avocado, sliced

1 cup shredded cheese (cheddar or Mexican blend)

4 large flour tortillas

Fresh cilantro, for garnish

Preheat your grill or grill pan over medium-high heat.

    In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper to create a marinade.

      Coat the chicken breasts in the marinade and set aside for at least 15 minutes to absorb the flavors.

        Once the grill is hot, add the chicken and grill for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.

          Remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.

            In a large tortilla, layer a portion of rice, black beans, corn, sliced avocado, grilled chicken strips, shredded cheese, and a generous drizzle of chipotle ranch dressing.

              Fold the sides of the tortilla inward and then roll it up from the bottom to the top to form a burrito.

                Repeat the process for the remaining tortillas and filling.

                  For an extra touch, you can grill the wrapped burritos on the grill for an additional 2-3 minutes on each side for a crispy exterior.

                    Serve the burritos warm, garnished with fresh cilantro and an extra side of chipotle ranch dressing if desired.
