4 slices of whole grain bread

150g goat cheese, softened

1 cup fresh blueberries

1/4 cup fresh basil leaves, roughly chopped

2 tablespoons honey

Salt and pepper to taste

2 tablespoons olive oil

Anleitungen
 

Preheat a panini press or grill pan over medium heat.

    In a small bowl, mix the softened goat cheese with honey until well combined.

      Take two slices of whole grain bread and spread a generous layer of the goat cheese mixture on each slice.

        Sprinkle the fresh blueberries evenly over the cheese on both slices.

          Add the chopped basil leaves on top of the blueberries, followed by a pinch of salt and pepper for seasoning.

            Top with the remaining two slices of bread to form a sandwich.

              Brush the outside of each sandwich with olive oil to enhance the crispiness.

                Carefully place the sandwiches in the panini press or grill pan. If using a grill pan, press down with a heavy skillet for even grilling.

                  Grill for about 3-5 minutes until the bread is golden brown and crispy, and the cheese starts to melt.

                    Remove from heat and let the sandwiches cool for a minute before slicing in half.
